- 2 white potatoes peeled boiled and mashed
- ⅔ cup butter (160 ml)
- 1 cup white granulated sugar (225 g)
- ½ teaspoon baking powder (2.5 g)
- ⅛ teaspoon salt (0.63 g)
- ½ cup heavy whipping cream (116 g)
- ½ cup milk (120 ml)
- 2 teaspoons lemon zest (10 ml)
- 2 tablespoons lemon juice (30 ml)
- 1 teaspoon vanilla extracts (5 ml)
- 4 eggs beaten
- 2 pie shells
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, combine sugar, baking powder and salt. Add potatoes and butter. Mix well.
- Gradually add whipping cream and milk, stirring constantly until well blended.
- Stir in lemon zest, lemon juice, vanilla and nutmeg. Add beaten eggs and mix well.
- Pour mixture evenly into pie shells, pressing the mixture into the bottom and making sure all edges are filled.
- Place in preheated oven and bake for 1 hour.
- Let it cool for a few minutes, serve and enjoy!
