Shepherd’s pie is also known as cottage pie and can be made with ground beef or turkey, although lamb is the traditional meat used. In Canada, it is referred to as shepherd’s pie regardless of the type of meat. It has traditionally been a recipe made from leftovers, so it is a terrific dish to serve when you need a simple solution for using leftovers when you have guests staying over for the weekend. They will be just as impressed with your cooking the next day as they were the night before! Besides meat, the other key ingredient is potatoes and in this pie recipe, leftover mashed potatoes are used.
Shepherd’s Pie Ingredients
- 1 lb cooked ground lamb (substitute cooked ground beef or cooked ground turkey if desired)
- 1½ cups leftover mashed potatoes
- 1 large onion, chopped
- 1 envelope powdered French onion soup mix
- 6 garlic cloves, minced
- 1 bag frozen carrots
- 1 can of creamed corn
- 1 can of kernel corn, drained
- ¼ cup Worcestershire sauce
- 2 tbsp butter
Instructions
The directions are pretty straight forward, just make sure the pie is heated through before serving. Cut into serving sized squares and scoop out with a large spoon.
1. Grease 11” x 9” glass baking pan and preheat oven to 350°F.
2. Cook frozen carrots (according to directions on package).
3. Melt butter in skillet over low to medium heat and cook onion until tender, stirring occasionally.
4. Add garlic and the meat to the pan and brown, taking care not to burn the garlic. Add Worcestershire sauce and soup mix. Place in prepared pan.
5. Spread the creamed corn, kernel corn, and cooked carrots evenly on top of the meat.
6. Top with leftover mashed potatoes.
7. Bake uncovered for 30 minutes, or until heated through.
8. Serve and impress your guests!
