cup crushed homemade potato chips (113 g)
1½ cups flour (75 g)
½ cup finely ground pecans (65 g)
½ cup sugar (115 g)
½ cup margarine, softened (115 g)
1 large egg yolk
1 teaspoon vanilla (5 ml)
1 cup confectioners' sugar (125 g)
Instructions
In a mixing bowl, mix chips, pecans and flour.
In another mixing bowl, combine cream margarine and sugar.
Stir in egg yolk and vanilla and beat well.
Add dry ingredients and continue beating until thoroughly mixed.
With damp hands, roll dough into small balls with 1 inch thickness and place on ungreased cookie sheets.
Bake dough for 15-18 minutes at 350°F or until cookies begin to become golden brown.
