Here, we have another quick and easy recipe. This recipe results into a unique potato candy that’s minty due to the peppermint extract added to it. These peppermint potato candies could be served as desserts for Christmas delicacy!
Ingredients
¾ cup warm mashed potatoes (180 ml)
2 teaspoons butter, softened (10 ml)
1 teaspoon peppermint extracts (5 ml)
2 lbs powdered sugar (910 g)
2 cups semi-sweet chocolate chips (475 g)
1 tablespoon shortening (15 ml)
Instructions
In a large mixing bowl, mix together mashed potatoes, butter and peppermint extract.
Gradually stir in powdered sugar and beat mixture thoroughly.
Spread potato mixture into a foil-lined 13x9-inch baking dish.
Either use microwave or double boiler to melt chocolate chips and shortening. Spread melted chocolates over potato mixture.
Cover and refrigerate to chill. Use a foil to lift candy out of pan. Remove foil and discard.
Slice candy into 1-inch squares. Store candies in an air-tight container.
