Ingredients
  • 2 cups mashed potatoes, cooked and chilled (450 g)
  • 1 egg, beaten
  • 2 green onions, diced
  • 2 tablespoons olive oil (30 ml)
Instructions
  1. In a small mixing bowl, beat the egg.
  2. In a large bowl, mix together mashed potatoes, beaten egg, and green onions. Stir mixture thoroughly.
  3. Pour olive oil in frying pan, over medium heat.
  4. When oil is already hot, drop spoonfuls of mixture into frying pan and flatten them into patties.
  5. Cook patties by batches, until lightly brown and then flip to cook the other side. Repeat steps until mixture is all used up.
  6. Sprinkle potato patties with your desired toppings.
  7. Serve warm and enjoy!

You can top these patties with various delicious toppings like shredded parmesan cheese ro blue cheese, walnuts, honey, mustard or roasted garlic.
