- 2 cups mashed potatoes, cooked and chilled (450 g)
- 1 egg, beaten
- 2 green onions, diced
- 2 tablespoons olive oil (30 ml)
- In a small mixing bowl, beat the egg.
- In a large bowl, mix together mashed potatoes, beaten egg, and green onions. Stir mixture thoroughly.
- Pour olive oil in frying pan, over medium heat.
- When oil is already hot, drop spoonfuls of mixture into frying pan and flatten them into patties.
- Cook patties by batches, until lightly brown and then flip to cook the other side. Repeat steps until mixture is all used up.
- Sprinkle potato patties with your desired toppings.
- Serve warm and enjoy!
