Making mashed potato pancakes is extremely easy. In fact, it is so easy that it is a great recipe for you to make with young children or for a quick breakfast or dinner meal. Since the pancakes include potatoes they are full of good healthy ingredients that are sure to fill your family while keeping them lean and healthy. Mashed potato pancakes are the perfect treat for a cold snowy day or a wet rainy day. They are a classic souther treat but are becoming increasingly popular up north and out west and the word has begun to travel about the delicacy that exists in a mashed potato pancake.

Potato Pancake Ingredients

To make a quality batch of mashed potato pancakes you can simply use your left over mashed potatoes. You will need:

  • about 6 large potatoes to make a family sized portion of mashed potato pancakes. if you do not have that many potatoes left over you can simply peel and mash a few more.
  • You will need 1 cup of bisqwik.
  • 2 eggs.
  • 1 cup of milk.
  • 2 tablespoons of vegetable oil.
  • 1 teaspoon of ginger.
  • 1 teaspoon of cinnamon.
  • 1/2 of a cup of syrup.
  • One handful of leeks.

Instructions

Once you have gathered all of the ingredients you will need to make your batter. First place all of the mashed potatoes into a large bowl. Combine the bisqwik and stir with a mixer. Once combined you can add the two eggs and the cup of milk. Mix thoroughly to combine. Then you will want to add your veggie oil, the ginger, the cinnamon, the syrup and the leeks. Run your mixer on high until all of the ingredients are well combined and the pancake batter is thick but runny.

Next you will want to bring a large skillet to medium high heat and grease with cooking spray. Once the pan is fully heated pour 1/2 cup of batter into circles in the pan. Pour as many circles into the pan as you have space. Let cook on one side for 60 seconds or until firm then flip. Let cook on second side for 60 seconds and then flip. make sure that the pancakes have cooked all of the way through and store in a heated place until all of your pancakes have cooked.

Serve hot and with hot syrup
