Ingredients
- 2 cups hot leftover mashed potatoes
- 2 tablespoons butter
- 2 eggs, separated (you will need both yolk and white)
- 1 cup of milk
Directions
Preheat the oven to 325 degrees.
Prepare a medium sized baking dish by wither greasing it with butter or spray it with cooking spray. For this recipe you will also need a larger baking pan of hot water to place the completed mashed potato soufflé recipe.
1. Heat up leftover mashed potatoes on the stove on a low flame or in the microwave on low until thoroughly heated through. If you are using leftover baked potatoes, remove the skin and cut them into small pieces. Puree them with an electric mixer, then heat. Make sure there are no lumps.
2. Crack the eggs and separate-whites in a mixing bowl and yolks in a small cup.
3. With a fork, beat the eggs yolks until they are broken up.
4. Add the butter and egg yolks to the leftover mashed potatoes or sweet potatoes. Set aside.
5. With the electric mixer, beat the egg whites on high until they are stiff and form white peaks.
6. Gently fold in the egg whites to the potato mixture until completely combined.
7. Pile the mixture into the greased baking dish.
8. Place the mashed potato soufflé into the larger pan of hot water and bake in a moderately low oven for 20-30 minutes.
Variations
If you are trying to cut fat and calories, you can substitute the butter and whole milk with margarine and a lower fat milk.
