- 4 medium potatoes, peeled and cubed
- 2 tablespoons cream cheese (30 g)
- 2 tablespoons flour (30 g)
- ¼ grated onion
- ¼ green onion
- Salt and pepper
- 3 -4 tablespoons vegetable oil (30-45 ml)
- 2 eggs, beaten
- In a small covered pot, submerge potatoes into water and bring to a boil for 15-20 minutes or until tender.
- Drain potatoes well, removing excess water and transfer into a mixing bowl.
- Stir in cream cheese into the bowl of cooked potatoes, and then mash them together using a fork or potato masher. Cool to room temperature or refrigerate overnight.
- In a large bowl, thoroughly combine the mashed potatoes, flour, beaten eggs, onion and green onion, and then sprinkle with salt and pepper.
- Heat the oil in a large skillet over a medium high heat. Spoon potato mixture and shape them into small patties.
- Fry potato patties, approximately 1-2 minutes, until browned and crispy.
- Flip over and brown the other side.
- Drain on paper towels to remove oil.
- Serve and enjoy!
