- 2 cups cold mashed potatoes (450 g)
- 2 cups ham, diced (300 g)
- ½ cup cheddar cheese, grated (50 g)
- ¼ cup scallion, sliced (38 g)
- ¼ teaspoon salt (1.25 g)
- 2 teaspoons vegetable oil (10 ml)
- Sauce ingredients: ½ cup sour cream (120 ml)
- 2 teaspoons prepared horseradish (10 g)
- 2 teaspoons grainy mustard (10 ml)
- ¼ teaspoon black pepper (1.25 g)
- In a medium bowl, combine mashed potatoes with ham, grated cheese, scallion and salt. Mix thoroughly until smooth.
- Divide this mixture into 8 portions, and form each into ½-inch thick patties.
- Heat 1 teaspoon of oil in a medium nonstick skillet, cook 4 patties at a time over medium heat, turning over patties 2-3 times until golden brown, this would take about 5 minutes.
- Repeat previous step with remaining patties.
- Meanwhile, stir sauce ingredients (sour cream, horseradish, mustard and black pepper) together in a small bowl until well blended.
- Serve the prepared sauce with potato patties.
