- 6 to 8 large potatoes
- 2 to 3 hard boiled eggs
- White vinegar
- 6 Bacon strips and bacon drippings
- Salt and pepper
- Boil the potatoes in a saucepan with salted water, for about 15-20 minutes or until they can be easily pricked by a fork. Drain well and set aside to cool.
- While cooking the potatoes, arrange eggs in a single layer in another saucepan, cover and simmer over medium-high heat for 15 minutes. Remove from hot water and soak in cold water to cool.
- Peel and slice potatoes into cubes. Slice the hardboiled eggs and add these into potatoes. Crumble strips of bacon over mixture.
- Save bacon drippings and mix this with an equal amount of white vinegar. Pour this mixture over potatoes, eggs and bacon. Mixture should be moist.
- Sprinkle with salt and pepper to taste. Serve warm.
