Ingredients
  • 6 to 8 large potatoes
  • 2 to 3 hard boiled eggs
  • White vinegar
  • 6 Bacon strips and bacon drippings
  • Salt and pepper
Instructions
  1. Boil the potatoes in a saucepan with salted water, for about 15-20 minutes or until they can be easily pricked by a fork. Drain well and set aside to cool.
  2. While cooking the potatoes, arrange eggs in a single layer in another saucepan, cover and simmer over medium-high heat for 15 minutes. Remove from hot water and soak in cold water to cool.
  3. Peel and slice potatoes into cubes. Slice the hardboiled eggs and add these into potatoes. Crumble strips of bacon over mixture.
  4. Save bacon drippings and mix this with an equal amount of white vinegar. Pour this mixture over potatoes, eggs and bacon. Mixture should be moist.
  5. Sprinkle with salt and pepper to taste. Serve warm.
