Ingredients
2 cups mashed potatoes, slightly salted (450 g)
1 can tuna packed in water, drained well (6 ounces or 168 g)
1 egg, beaten
1 small onion, finely chopped
⅓ cup self-rising flour (40 g)
Oil for frying
Instructions
In a mixing bowl, combine mashed potatoes with beaten egg and onion.
Add drained tuna and flour into the mixture, and then stir to combine well.
Shape portions of mixture into patties.
Pour ½ inch of oil in a pan over medium heat, fry the patties until brown on one side, then turn and brown the other side.
Drain on paper towels.
Serve warm and enjoy!
Notes
You can lightly salt them and eat them plain or with cheese. These patties are also great with applesauce for a snack.
