Creamy Irish Potato Soup

Popular with locals in Ireland, the Irish potato soup recipe is well worth trying. It has been a part of Ireland’s custom foods for many years and is still traditionally made as it would many years ago. With Ireland not having the greatest of weathers, this recipe dish is mostly served on a cold wet day, typical for Ireland. Even though we have lots of different dishes for a cold winter’s day, this dish can be created any time of the year. A traditional Irish potato soup made much more delicious because of its creamy blend and milk added to the fragrant chicken broth. With the chicken broth and milk blended together with a food processor, it made both flavors intertwine making it an irresistible soup for dinner!
Ingredients
  • 2 tablespoons butter or margarine (30 g)
  • 4 green onions, sliced
  • 1 stalk celery, sliced
  • 1¾ cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic) (400 ml)
  • ⅛ teaspoon ground black pepper
  • 3 medium potatoes, peeled and sliced ¼ inch thick
  • 1½ cups milk (340 ml)
Instructions
  1. In a large saucepan, melt butter and sauté the onions and celery. Cook until tender.
  2. Pour in the broth, black pepper, and potatoes and bring to a boil. Cover and simmer in low heat for 15 minutes or until potatoes are tender and broth is thickened.
  3. Separate half of the broth mixture and half of the milk in a food processor or blender. Cover and blend until smooth and evenly mixed.
  4. Repeat procedure with the remaining half of the broth mixture and milk. And then return mixture into the saucepan and bring to a boil.
  5. Serve hot and enjoy the Irish custom!
