- 2 whole eggs
- 3 tablespoons flour (45 g)
- ½ teaspoon salt (2.5 g)
- ⅛ teaspoon pepper (0.63 g)
- 1 cup apple, coarsely shredded (100 g)
- 2½ cups about russet potatoes, coarsely shredded (440 g)
- 1 tablespoon finely chopped green onion (15 g)
- ½ cup shredded cheddar cheese (50 g)
- Oil
- In a large mixing bowl, beat the eggs, and then stir in flour, salt and pepper. Blend thoroughly.
- Stir in apples, potatoes, green onions and cheese, and then mix well.
- Heat a ½ inch of oil in a frying pan over medium-high heat.
- Drop potato mixture by tablespoonfuls into hot oil. Flatten into 1-1/2-inch round pancakes.
- Pan-fry for 3 to 4 minutes in each side, or until golden and crispy. Add more oil as needed.
- Remove from pan and drain on paper towels.
- Serve warm with syrup or applesauce.
