This recipe makes candy that tastes like heaven. It is just that good. You would love peanut butter and potatoes even more. You won’t regret reading out and following this recipe. This could be served as a yummy side dish or dessert during special holidays. You can also dip the peanut butter potato candy rolls into melted chocolate.
Ingredients
1 small potato
2 pounds confectioner’s sugar (900g)
1 cup Peanut butter (240 g)
Instructions
First, wash and peel potato and then slice potato thinly. In small pot, cover potato slices with water and cook over medium heat until tender. Drain potato slices and place them in mixing bowl. Mash and grate potato thoroughly.
Pour out ½ sugar and mix well. Mix in remaining sugar, scraping down sides as needed. Cover counter top with a sheet of waxed paper dusted adequately with confectioner’s sugar. Scrape out dough and place onto waxed paper. Dust the top of the dough with more confectioner’s sugar.
Roll dough into ¼ inch thickness. Brush dough with peanut butter abundantly and roll up like making cinnamon rolls. Once you have formed the dough into a log-shaped, roll it in your waxed paper and slice into half.
Place halves in a gallon zipper seal bag and refrigerate for about an hour. After chilling, remove waxed paper and cut into ¼ inch slices. Store the leftovers in the refrigerator.

Notes
You can add a teaspoon of vanilla to the mixture for an additional yummy flavor. You could also use Nutella or soy butter as an alternative for peanut butter.
