Ingredients
4 large baking potatoes
2 tablespoons butter, melted ( 30 g)
3 tablespoons grated Parmesan cheese (45 g)
½ teaspoon dried rosemary, crushed ( 2.5 g)
¼ teaspoon salt ( 1.25 g)
⅛ teaspoon pepper ( 0.63 g)
½ cup shredded Cheddar cheese ( 50 g)
¼ cup real bacon bits ( 56 g)
1 green onion, chopped
Instructions
Wash and Scrub potatoes. Using a sharp knife, slice the potatoes thinly down the middle, leaving slices attached at the bottom.
Lay the potatoes on a microwave-safe plate and spread with butter evenly.
Mix the Parmesan cheese, rosemary, salt and pepper on a mixing bowl. Sprinkle the mixture over potatoes and between slices.
Microwave, uncovered, and on high for 12-18 minutes or until potatoes are soft and tender.
Sprinkle with cheddar cheese, bacon and onion as toppings. Microwave for 1-2 minutes or until cheese is melted.
