We have here a fantastic recipe of salmon and potato pie. French style and Canadian style of making potato pie are merged into one. Instead of mashing the potatoes separately from other ingredients, this is uniquely made because the ingredients are mixed and mashed all together, resulting into a very creamy mixture. You will love the excellent flavor of salmon, the richness of mashed potatoes and the savory spices rolled into one extraordinary pie. This recipe is simple and quick for a fulfilling main dish or dessert. Now, here’s how to make it.
Ingredients
  • 6 potatoes, peeled
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 tablespoon butter (15 g)
  • 1 (6 ounce) can red salmon (168 g)
  • 1 teaspoon dried thyme (5 g)
  • 1 cup milk (240 ml)
  • 2 (9 inch) unbaked pie shells
  • Salt and pepper
Instructions
  1. First, preheat the oven to 400 degrees F (200 degrees C).
  2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain thoroughly, cool and chop.
  3. In a medium saucepan, cook onions, garlic and butter over medium heat until vegetables become transparent in color.
  4. Combine onion/garlic mixture with salmon, thyme and cooked potatoes. Mash all together with milk, adding just enough to bring about a smooth consistency.
  5. Spread mashed potato mixture evenly into pie shell.
  6. Place the other pie shell over top of salmon mixture. Cut slits into the upper shell, and then pinch edges of both pie shells together.
  7. Bake on lower rack of oven for 45 minutes.
  8. Let it cool for 10 minutes, and then serve and enjoy!
Notes
You can use the juice of the canned salmon to mash the potatoes and all other ingredients. Serve this yummy potato pie with a béchamel sauce and steamed broccoli.
