- 2¾ cups all-purpose flour, sifted (300 g)
- 2½ teaspoons baking powder (12.5 g)
- ¾ teaspoon salt (3.75 g)
- 1 tablespoon salad oil (15 ml)
- 1¼ cups fresh orange juice (300 ml)
- 1 cup sugar (200 g)
- 1 teaspoon baking soda (5 g)
- 1 egg
- ½ teaspoon vanilla (2.5 ml)
- 1 tablespoon orange rind, Grated (15 g)
- ½ cup nuts, chopped (150 g)
- ⅔ cup potato, Riced, cooked (150 g)
- Mix together flour, sugar, baking powder, baking soda and salt in a large bowl.
- In small bowl, whip egg with oil, orange juice, orange rind and vanilla.
- Stir in prepared potatoes into the mixture.
- Blend orange mixture all at once to dry ingredients and stir to mix well; Add chopped nuts.
- Place into a greased 9x5x3 loaf pan.
- Bake in 325 degrees F oven for 60 minutes or until cake tester inserted comes out clean.
- Let it cool for 10 min.
- Remove from pan and cool completely.
